About Link and Saria:
The Legend of Zelda: Ocarina of Time starts out in Kokiri Forest, where Link lives. Saria is the first to greet Link the moment he comes out of his treehouse; after Navi the faery has told Link that the Great Deku Tree has summoned him, and that she will be his guardian faery.
Saria, as well as the other Kokiri (at least, the girls, I think) congratulate Link on having found a faery companion... of course, Mido, the self-titled, "Boss of the Kokiri", is still mistreating Link, even after he has Navi - and tells Link he needs a sword, and shield, in order to proceed pass him to meet with the Great Deku Tree (and does not give Link a break, even after Link points out Mido also doesn't have either).
Afterwards, if Link talks to other Kokiri, or directly to Saria - they tell you about the Deku shield being sold in the shop; while the Kokiri Sword is hidden somewhere in the forest.
When Link shows Mido he has the Deku Shield, and Kokiri Sword - Mido is in shock, but lets Link by; all the while grumbling to himself about how did Link get to be the favourite of the Great Deku Tree; and Saria, whom is Link's closest friend.
Link then meets with the Great Deku Tree, and has to rid him of the danger inside of him, which was apart of a curse cast by, "the Evil King" (Ganondorf) from Gerudo Valley, to the west of Hyrule.
Despite Link's best efforts, the Great Deku Tree tells Link that he was doomed to die before Link had been summoned; but before the Great Deku Tree passes - he tells Link of his "destiny", which is to save Hyrule.
And so, Link has to leave Kokiri Forest; but before he gets to - Saria is waiting on the bridge for him; telling him she has always known that he was going to leave, because he was different from her friends; and to give him the "Faery Ocarina", as a momento of their friendship.

Anyways, it's clear that Link, and Saria, are very close friends; ever since Link was very young... some fans suggest her to be of a mother, or sister, figure to him; while others think of their relationship as romantic.
It is stated in the game, by a reluctant Mido that Saria, "really liked... (Link)"; and that she was waiting for him to come back, even after seven years.
Although, if you look closely in the game for references for Star Wars - (no really, R2-D2 IS in the game!) - the bridge scene at the beginning, will remind you of the bridge scene in the third/last movie; where Luke tells Leia she is his sister...
It was most likely inspired by that scene; but whether it's a hint towards Link's feelings towards Saria; or not, is left up to the player (or maybe, it's another empty, "Zelda is Link's sister", theory... but then again, it's Saria there... not Zelda, whom herself already has a dozen, or so; hints at a sibling relationship with Link, in the game anyway >.>;;).
